How do I keep driving days bearable for children on the Wild Atlantic Way?

Use the family pace as a ceiling, not a target: no day over about two hours at the wheel for young children, and a stop built in every hour or so. Our road data shows how short the good hops are: Killarney to Tralee is 35 minutes, Ennis to Limerick is 35 minutes, and Galway to Ennis is an hour. Base for two or three nights at a time in Killarney, Galway or Westport and day trip out, rather than sleeping somewhere new each night. Put the day's one attraction before lunch, keep a beach, playground or pool in reserve for the afternoon, and let children choose one stop per day from a short list you can live with.
