What food markets are worth planning around in Galway, Cork, Belfast and Dublin?

Four markets repay building a morning around. Cork's English Market is a covered city market trading since 1788, open Monday to Saturday, 8am to 6pm, and the place to see Cork food in one hall. Belfast's St George's Market runs Friday for variety goods, Saturday for food and crafts, and Sunday with a craft emphasis. Galway Market fills Churchyard Street beside St Nicholas' Church every Saturday, and Sundays year round, with extra market days from Wednesday to Friday in July and August. In Dublin, the Temple Bar Food Market takes over Meeting House Square on Saturdays, roughly 10am to 4.30pm. Go before midday, bring a bag, and eat something from a stall before you start shopping.
