What is boxty, colcannon, champ, coddle and a farl?
All five are potato country, in different coats. Boxty is a grated potato pancake from the northwest, Leitrim and Fermanagh country, fried and served with a fry or a stew. Colcannon is mashed potato beaten with kale or cabbage and butter. Champ is the same mash with chopped scallions, the spring onions that give it its bite. Coddle is Dublin's slow pot of sausages, bacon, onions and potatoes in stock. A farl is a quarter cut of griddle bread, soda or potato, from the Ulster tradition, best fried in the pan. Order whichever one the menu bothers to name; somebody's grandmother is behind it.
